Roasted Root Vegetables Herbs de Provence<\/strong><\/p>\n 2 lb. fresh beets<\/p>\n 2 lb. fresh yams<\/p>\n 2 lb. fresh turnips<\/p>\n ¼ cup olive oil<\/p>\n ¼ cup Herbs de Provence<\/p>\n Salt and pepper to taste<\/p>\n Heat oven to 400 degrees<\/p>\n Peel beets, yams & turnips<\/p>\n Cut into 1-inch cubes<\/p>\n Toss vegetables in olive oil<\/p>\n Sprinkle Herbs de Provence and mix well<\/p>\n Place vegetables on a sheet pan, season with salt & pepper, Roast in oven for 45 minutes to an hour or until fork-tender<\/p>\n Serves 8<\/p>\n **Note. When peeling beets, use plastic gloves.
